EXPERIMENT 1 : ANGLE CAKE
our 1st experiment is doing the angle cake, we use outline the best method for making an angle cake with optimum, texture, volume and tenderness.
BASIC FORMULA - ANGLE CAKE
- 10g - sugar
- 15g - cake flour
- 41g - eggs white
- 0.6g - cream of tartar
- 0.1g - salt
our group want to find varying the amount of beating of the whites.
- under beating - but beat the white only to the point where they will not quite hold the peak.
- this is our experiment about angle cake after bake
