EXPERIMENT 3: DRYING OF FOODS


BASIC FORMULA - FRUIT LEATHER 

 The Ingredients :

  •  2 1/2 C - kiwi, hulled and cut in half
  •  25 g - sugar

Puree kiwi in blender until smooth. Stir in the sugar. Line jelly roll pan with aluminum foil and fasten it to edges with masking tape. Spread the fruit evenly in the pan. Dry in oven at 140 F (160 c) until completely dry and no longer sticky (approximately 12 hour). Remove from aluminum foil and roll up. Wrap the roll tightly in aluminum foil and store at room temperature in a tightly closed plastic bag or container.

EXPERIMENT 2 : YEAST BREAD 


On 10th February 2011. our experiment 2 we use of various types of flour in yeast products.also make bread by the same formula but in different procedure.



BASIC FORMULA - BREAD

  • 7g (1 pkg)        yeast, dry
  • 118ml (1/2 c)   water at 35 c 
  • 4g (1tsp)          shortening
  • 6g (1 1/2 tsp)   sugar
  • 3g (1/2 tsp)       salt
  • 200g (17/8 c)   all purpose flour
PROCEDURE
 

1.Amount of kneading
   e : 500 strokes kneading - Prepare basic formula, but knead 500 times using exactly the same technique and pressure throughout the kneading process.










2.Amount of flour
   a : Too little flour - prepare the basic formula, but reduce the weigh of flour to 160 g. If the dough is too soft to knead, simply knead it in the bowl with a spoon. Proceed with the rising according to the basic formula.





















EXPERIMENT 1 :  ANGLE CAKE


our 1st experiment is doing the angle cake, we use outline the best method for making an angle cake with optimum, texture, volume and tenderness.

BASIC FORMULA - ANGLE CAKE


  • 10g - sugar
  •  15g - cake flour
  • 41g - eggs white
  • 0.6g - cream of tartar
  • 0.1g - salt



   our group want to find varying the amount of beating of the whites.



  •  under beating - but beat the white only to the point where they will not quite hold the peak.
